$60 Grocery Budget Meal Plan

My main goal in posting is to:
- Encourage you to make some kind of meal plan to reduce your stress and your budget.
- Give you permission to serve super simple meals.
- Provide some meal ideas.
I’m sharing what we’re actually eating this week which includes a combination of both pantry, fridge and freezer items we have on hand, as well as fresh foods I purchased this week.

THIS WEEK’S $60ish GROCERY BUDGET SHOPPING TRIP
Here’s the receipt.
And this is what I purchased.
The burgers are for the freezer for future meals.
I also bought 20 pounds of boneless, skinless chicken breasts for 99 cents a pound which I didn’t photograph because it looks kinda’ gross.
And that brought the weekly total over the $60 budget.

We’re Raising the Budget
So about going over the budget.
After several months of greatly over-spending on groceries, eight weeks ago I set the budget at $60 a week. I felt like it was a reasonable number because we had food in the pantry, fridge and freezer which I would be pulling from so I wouldn’t need to buy all of our groceries for the week from the $60 budget.
But for 5 out of the 8 weeks I went over, and some weeks I went over by quite a bit.
So I’ve decided to raise the budget to $75 a week and see how that works. I’ll keep you updated.
This Week’s Meal Plan
This isn’t a fancy gourmet meal plan, but what we’re actually eating this week on our $60 grocery budget.

Very Blueberry Smoothie, Cheese Toast*
Homemade Freezer Waffles* with DIY Waffle Syrup*
Oatmeal* with cinnamon* and raisins* x2
Cereal* with milk* x2
Scrambled eggs*, banana
LUNCH
Peanut Butter* and banana sandwich (bread from freezer), celery sticks x2
Leftovers from Dinner x2
DINNER
Chicken Enchiladas* (tortillas and cheese from fridge), rice*, steamed green beans*
Frozen pizza, green salad
Hot Dogs, buns, canned chili, cole slaw, potato chips
Spicy Black Beans*, rice*
Grilled Cheese Sandwiches, Tropical Fruit Salad*
Crunchy Chicken Salad, homemade bread x2

I have had to up the budget in the past few months. It doesn’t seem like I can get some items as cheap as I could before covid, which any household item is included in grocery (easier for me). We all know tp & cleaning supplies have gone up w/ no sales.
Yes, I’ve noticed fewer sales and higher prices. 🙁
