$60 Grocery Budget Meal Plan
It’s that time again! Here’s a peek into my grocery shopping and meal plan for this week.
My main goal in posting this is to:
- Encourage you to make some kind of plan to reduce your stress and your budget.
- Give you permission to serve super simple meals.
- Provide some meal ideas.
I’m sharing what we’re actually eating this week which includes a combination of both pantry items and fresh foods, so hopefully you’ll find something you can add to your meal plan.
THE SECRET TO THE $60 GROCERY BUDGET
The main way I stick to the budget is by purchasing lower priced and sale items in multiples so I have a constant stockpile to work from. Each week I’m purchasing some items for the current week, and some items for upcoming weeks.

THIS WEEK’S $60 GROCERY BUDGET SHOPPING TRIP
This week I shopped at two stores:
Save a Lot because they have generally low prices on staple items and weekly sale items.
The frozen dinners are for my husband to take to work for lunch for the next couple of weeks. The pork roast will go in the freezer for later.
The other items will be eaten this week.
And Publix for their BOGO sales this week.
The extra cereal and ketchup will go into the longer-term storage pantry for later.
I don’t include non-food items in the grocery budget so the deodorant (the brand my husband uses) and my fave body wash were deals that were too good to pass up and totaled $24.44 out of my $50/month non-food and household budget.

This is no fancy meal plan, but what we’re actually eating this week on our $60 grocery budget.
*Items marked with an asterisk were purchased in previous weeks within the $60 budget and are in the pantry, fridge or freezer. Click colored links to go to recipes.
BREAKFAST
Delicious, Moist Blueberry Muffins* (ingredients except for blueberries on hand)
Cottage Cheese with blueberries, peanut butter* toast
Very Blueberry Smoothie, Cheese Toast
Fried Eggs with Spinach* (eggs from freezer), Black Bean and Corn Salsa
Veggie Breakfast Scramble* (eggs from freezer), orange slices
Cereal with milk* x2
LUNCH
Roast Beef Sandwiches (bread from freezer*) x2
Leftovers from dinner x2
PBJ*, applesauce* x2
DINNER
Spinach Salad with Cranberries* and Orange Balsamic Vinaigrette (plus baked chicken from freezer)
Authentic Mexican Enchiladas*, rice*, Cucumber Tomato Salad
Brenda’s Beef Stew* (all ingredients except for beef on hand) x2
London Broil* (from freezer), mashed potatoes*, green beans*
Leftovers
Dinner with Friends
