$60 Grocery Budget Meal Plan
Sorry I missed the $60 Grocery Budget posts the last two weeks, but we thought that Hurricane Dorian was coming through and had lots to prepare around our home. Thankfully we had no damage, but then I was busy with the big launch of my latest project (which you can find out about when you join The Peaceful Mom Community HERE).
So let’s catch up.
We’re currently trying to save money on regular expenses so we can pay off some unexpected medical bills, so our weekly budget is $60 to feed three adults. (My oldest three children have moved out on their own.)
I don’t know if you noticed, but there were five weeks in August and as of the end of the fourth week we had spent $264, which was already over our $60/week budget for the month.
We really want to pay off our medical bills as quickly as possible so that week we decided to see if we could live off of just what we had on hand plus $30. We could have chosen to give less money or save less money, but we decided to try limiting our comfort for the sake of spending less.
Here’s what happened:
-Friends gave us tickets to a banquet they couldn’t attend (free dinner).
-My oldest daughter brought over two pounds of dried black beans she didn’t want.
-My youngest daughter attended a cookout and brought home leftovers including burger buns, roasted corn and sliced tomatoes that “just happened” to go with the burgers I had in the freezer.
-A friend was cleaning out her deep freezer and gave us 9 pounds of bacon and 40 pounds of ground beef!
I prepared the ground beef for the freezer, which will help to feed us for the next several weeks.
Drumroll please…
August Monthly Total (5 weeks): $306.01 or an average of $61.20 per week
Now on to September…
Last week we spent $44,51.
This week I spent $72.29.
But the cashier charged me for two bags of salad so I had $2.99 refunded.
That brought our total for the week to $69.40.
And here’s what I purchased.

This is no fancy meal plan, but what we’re actually eating this week on our $60 grocery budget.

BREAKFAST
Homemade Freezer Waffles* with DIY Waffle Syrup* x2
Veggie Breakfast Scramble* (broccoli slaw in fridge), orange slices
Greek Yogurt, banana
Scrambled eggs, sausage patties
Oatmeal with cinnamon and raisins
Oatmeal Pancakes (from leftover oatmeal)
Bagel with cream cheese
LUNCH
Very Blueberry Smoothie* (ingredients in freezer), popcorn*
PBJ, apple slices* with cinnamon x2
Tortilla Chips with melted cheese, cucumber slices
tuna salad*, crackers*
leftovers from dinner
DINNER
Delicious Steak Fajitas*, rice*, corn*
Spicy Chicken Thighs (see recipe at the end of the post), sauteed cabbage, rice*
Black Bean Chicken Chili* (beans from freezer), cheese toast triangles
Spicy Black Beans, rice
Breakfast for Dinner: scrambled eggs and bacon*
Cowboy Baked Beans (see recipe at the end of the post), salad, garlic toast (ground beef from freezer)
Grilled Cheese Sandwiches, Tropical Fruit Salad

**RECIPES
Cowboy Baked Beans
INGREDIENTS
(1) 3 lb can baked beans
1 lb ground beef, browned with diced onions
1 tbsp Lawry’s Seasoning Salt
INSTRUCTIONS
Bake at 350Λ F for 30 minutes until bubbly. Serves 4.
Spicy Chicken Thighs
Place chicken thighs in a large glass baking dish. Sprinkle with Lawry’s Seasoning Salt.
Bake at 400Λ for 30 to 45 minutes until skin is crispy and internal temperature reaches 165Β° F.
