$60 Grocery Budget Meal Plan
It’s been a while since I posted a grocery shopping trip and meal plan for the week, but I’ve heard from many readers that they’re struggling financially and I thought that sharing our personal grocery shopping and meal plan might be helpful.
We are currently trying to save money on regular expenses so we can pay off some unexpected medical bills, so our weekly budget is $60.
Also, since my last post my two oldest daughters have moved out so I’m only feeding my husband, myself and my 18 year old daughter.
Here’s the receipt.
And here’s what I purchased. (The dog food on the top left of the photo was an additional $5 from the pet store and not included in our grocery total.)

BREAKFAST
Yogurt with fresh blueberries and Crockpot Granola*
Bagel Thins with peanut butter*, banana slices
Fruit Smoothie* (fruit in freezer, milk*)
Oatmeal
Cheese toast, applesauce*
Scrambled eggs*, toast x2
LUNCH
Greek Salad (romaine, black olives*, Feta cheese*, leftover shredded chicken, Greek salad dressing*) x2
Tuna Salad*, rice cakes*
PBJ sandwich*, pretzels* x2
Ham sandwich, cucumber slices
Nachos*, raw veggies with ranch dressing*
DINNER
Slow Cooker Brunswick Stew* (ingredients in freezer), cheese toast x2
Cowboy Baked Beans, romaine salad, garlic toast (ground beef from freezer)
Spicy Chicken Thighs, steamed asian veggies*, rice*
Breakfast for Dinner: Scrambled Eggs, bacon*, cherries
Chicken Quesadillas (leftover chicken from Spicy Chicken Thighs above), black beans*
Grilled Cheese Sandwiches, romaine salad

RECIPES
Cowboy Baked Beans
INGREDIENTS
(1) 3 lb can baked beans
1 lb ground beef, browned with diced onions
1 tbsp Lawry’s Seasoning Salt
INSTRUCTIONS
Bake at 350Ëš F for 30 minutes until bubbly. Serves 4.
Spicy Chicken Thighs
Place chicken thighs in a large glass baking dish. Sprinkle with Lawry’s Seasoning Salt.
Bake at 400˚ for 30 to 45 minutes until skin is crispy and internal temperature reaches 165° F.
Slow Cooker Brunswick Stew
INGREDIENTS
1 lb cooked pulled pork
1/2 lb shredded baked chicken
(1) 24 oz can diced tomatoes
(1) 16 oz bag frozen corn
(1) 12 oz bag frozen lima beans
(1 ) 32 oz container chicken broth
1/4 cup prepared barbecue sauce
salt and pepper to taste
INSTRUCTIONS
Combine all ingredients in slow cooker and cook on low for 4-6 hours.

I love these grocery/menu post……so fun to get different ideas & not spend extra $ for more expensive ingredients. Thanks for keeping it simple & for sharing more personal posts. I have always said we have to let our children “fly” where God intends not what we expect. Believe me not always easy but………….

Yes, I enjoy the more personal posts too. We all have problems & it helps us with ideas when you share personal things & your ideas to solve or a way to cope. As far as kids go you never stop being a Mom & always wanting what’s best for your kids. I am a Grandmother with grown kids & now my Grands are starting to graduate from high school. One told me today that he’s going to take some time off from college & just work. I also tried to talk to him but in the end they have to make up their minds. It is so upsetting when you see they are making mistakes. So, my point is you’re a good Mom or you wouldn’t care what they did. It doesn’t matter how old they are you don’t want to see them making bad decisions. As a Mother this feeling never goes away. You just have to pick your battles.
On the working part time I have found in my life that a lot of times it can spread you too thin & actually cause more stress. I think you really enjoy your own business & you’re very creative & your heart is in it. Thank you for your posts. Sorry this is so long.
