Sorry that I missed the menu last week. We updated our kitchen, I had a speaking engagement and we hosted 40 people at our home for my daughter’s graduation party so it was a bit crazy. To decrease the impact of the party on our budget I spent $20 on groceries by purchasing a few items to supplement what we already had in the freezer, fridge and pantry.
This week my husband and I were away for three days so I was able to spend less on groceries as these meals fed fewer people for part of the week, and we still have food on hand from previous weeks.

BREAKFAST
Delicious, Moist GF Blueberry Muffins (with a touch of maple syrup)
Scrambled eggs, sausage patties x2
Cereal with milk x2 (GF for gluten free kids)
Organic Yogurt with Crockpot Granola and fresh blueberries
Cheese Toast, banana (GF bread for gluten free kids)
LUNCH
Rice cakes with peanut butter, banana slices
Easy Cheese Quesadillas, green pepper slices
Turkey Sandwich, carrots and ranch dressing* x2
Nacho chips with melted cheese, avocado slices, cherry tomatoes
Leftovers from Dinner
DINNER
Taco Cups* (Zaycon Foods ground beef from the freezer), Black Bean and Corn Salsa
Sloppy Lasagna Bake, homemade garlic bread, romaine salad
Spicy Chicken Thighs* (sprinkle chicken skin with Lawry’s Seasoning Salt and bake at 350 degrees for 1 hour), steamed broccoli and cauliflower
Grilled Cheese Sandwiches, Tropical Fruit Salad* (from the pantry)
Crunchy Chicken Salad, fresh fruit
Rotini with Crock Pot Pasta Sauce (made with ground beef from the freezer), romaine salad
Homemade Pizza with 10 minute crust

We actually had your tropical fruit salad a couple weeks ago and loved it! =) It also made me realize that most store-brand canned mandarin oranges don’t have a no-added sugar version, which is so weird! I ended up having to buy a can with Splenda added, which isn’t bad, but I guess I’ll have to keep looking.
So glad you liked it Jaime! It love super simple recipes like this. I don’t worry too much about the sugar because I think most of it is in the juice which I drain off before making the salad. Let me know if you find a brand without the sugar though. 🙂
