The next two weeks are going to be a little crazy at our house with celebrating my son’s 21st birthday, my middle daughter’s birthday and graduation, my youngest daughter’s first equestrian show and to top it all off, I have a speaking engagement.
All this to say, there is not a lot of cooking going on.
I am keeping it simple this week (and I don’t have any photos of the groceries this week either).

Yogurt with granola and fresh fruit
Cereal with milk x3
Cheese Toast, banana x2 (GF bread for GF kids)
Scrambled eggs
LUNCH
Turkey Sandwich, carrots and ranch dressing* (Lettuce Wrap for GF kids)
Cheese Nachos with avocado slices
Hummus, tortilla chips
Rice Cakes with peanut butter, apple slices with cinnamon x2
Leftovers from dinner
DINNER
Taco Salad (taco meat from freezer*, lettuce, tomato, corn chips, black beans, ranch dressing*)
Chicken Enchiladas, rice, steamed green beans
Slow Cooker Beef Roast, steamed broccoli
Breakfast for Dinner: Eggs and bacon (from Zaycon Foods)*
Grilled Cheese Sandwiches, chips (GF Bread for GF kids)
Take Out Pizza (frozen GF pizza for GF kids)

It is always so interesting to me to read what others are doing to save on their groceries and just how much they spend. For 5 of you I am curious when you say bacon and eggs, how much does each person get.. Its so easy to go thru alot of eggs. There are just 2 of us now and I am spending 100.00 a week on groceries, of course its not really 100.00 if I were to just buy enough chicken breasts for the week instead of the bag (which can last 2 weeks). How many pounds of bacon are you cooking for one meal for 5?

When we have bacon and eggs I make a big pan of scrambled eggs because I can stretch the eggs further by adding a little bit of milk so we can usually get by with about 2 eggs per person, so 10 eggs. There are usually around 12 slices in a 1 pound package of bacon so we each have 2 pieces of bacon and let Dad have the extra one or two.
There are a lot of factors that go into grocery spending: food prices vary from region to region and store to store, dietary needs and preferences and the amount of food people eat. My husband doesn’t work a physically demanding job so he eats less than someone who is out working hard all day. I don’t post my menus to say that everyone can do what we do but just to give you some ideas to help you cut the food budget.
It sounds like you are doing a great job of researching ways to cut your own grocery spending. Keep up the good work!
