If you’ve been following along you know that we lowered our grocery budget from $125/week to $100 a week in October of last year.
With one teen who has to eat gluten free it has been a challenge, but we wanted to re-build our emergency fund which had been depleted by some unexpected repairs after we moved to our new house in August. One of the easiest ways to find more money in the budget is by cutting back on the grocery spending.
While I love saving money, I also realize when it’s important to spend money. This week we discovered that my youngest daughter will also need to eat a gluten free diet for medical reasons so we are increasing the budget back to $125 to allow me to purchase some more expensive GF foods. I spent more this week because I needed to stock up on some items.

January Monthly Total: $559.78
(5 Weeks in January so I am $59 over for the month.)

BREAKFAST
Fried Eggs with Spinach, Black Bean and Corn Salsa, orange slices
Cheese Toast (gf bread), apple sauce
Organic Yogurt with Crockpot Granola and fresh blueberries
Oatmeal with cinnamon and raisins
Sausage patty, scrambled eggs
GF Granola, milk
LUNCH
Greek Salad (romaine lettuce, Feta, grilled chicken, Calamata olives*)
Rice Cake with peanut butter and banana slices
Nacho chips with melted cheese, avocado slices, sour cream
Turkey Lettuce Wrap, Apples with cinnamon x2
Tuna Salad, cucumber slices
Easy Cheese Quesadillas (made with corn tortillas), green pepper slices
Leftovers from Dinner
DINNER
Delicious Steak Fajitas (corn tortillas for GF), Tomato Cucumber Salad
Crustless Quiche, fresh cantaloupe slices
Spicy Black Beans, rice
Cheese Burgers*, Home Fried Potatoes*, steamed broccoli and cauliflower*
Taco Bowls (Beantastic Taco Meat, tomatoes, lettuce, cheese, sour cream and salsa served on corn chips)
Black Bean Chicken Chili, corn chips
Indoor Picnic Dinner: deli roast beef, cheese cubes, olives, GF crackers, apple slices
