$125 Budget Weekly Menu
Now that my son has moved out on his own I am going to challenge myself to lower the weekly budget to $100. We will try it for the next few weeks before officially lowering it but I made it this week by using these strategies:
Eat beans. Beans are cheap, filling and a fantastic way to cut your grocery budget. Click here to see how I cook beans ahead of time and freeze them for later plus our fave bean recipes.
Cook from Scratch. It’s faster and easier to buy convenience foods like canned beans and frozen pizza or pre-made pizza crust, but taking a little extra time to make/cook these foods yourself can save big bucks. This week I am making 10 Minute Pizza Crust to save money.
Use Less Meat. We love meat but it does add quite a bit to the budget. This week instead of making our usual Delicious Steak Fajitas which require a lot of meat, I am making Fajita Bowls with rice, beans, corn and a little bit of meat. By combining several ingredients in a bowl you can use less of more expensive ingredients like meat plus it makes the dish gluten free because you don’t use flour tortillas.

Oatmeal* with cinnamon* and raisins*
Oatmeal Pancakes* (from leftover oatmeal)
Cheese Toast, applesauce*
Cereal with milk x2
Organic Yogurt with Crockpot Granola and fresh mango
LUNCH
Homemade Pizza Bagels
Turkey Sandwich, carrots and ranch dressing* x2
Nacho chips with melted cheese and avocado slices
PBJ*, apple slices with cinnamon
Homemade Mac n’ Cheese, raw carrots and ranch dressing*
Leftovers from Dinner
DINNER
Slow Cooker Chipotle Chili, corn chips
Fajita Bowls (prepared fajita meat — I used sirloin tip steak, cooked rice*, black beans*, corn*, salsa*)
Fettucini* Alfredo, steamed broccoli
Ham and Swiss Grilled Cheese, grapes
Easy, Cheesy Chicken Enchiladas, rice, steamed green beans*
Homemade Pizza with 10 Minute Crust
Banana Pecan Waffles, scrambled eggs
