Easy Freezer Cooking: I love saving time and money by making food to put in the freezer for later. Freezer cooking makes life easier and keeps me out of the drive-thru!

These Freezer Breakfast Burritos with sausage and egg are one of our new favorites! Try them and let me know what you think.
1 pound ground pork sausage
2 tablespoons olive oil
1 small red onion
3 small or 1 large bell pepper (I used red and yellow for color)
1 dozen large eggs
2 tablespoons butter
1 cup shredded cheddar or Monterrey Jack cheese
8 flour tortillas -soft taco size (use gluten free tortillas to make this gf)
INSTRUCTIONS
Dice the peppers and saute them in olive oil for 2 minutes until they begin to soften. Meanwhile chop the onion and add it to the peppers and cook for 1 additional minute.
Add sausage to skillet and stir to break it up into small pieces. Continue to stir and cook until sausage is no longer pink. Set aside.
In a separate pan melt butter and scramble the eggs. Add salt to taste
When eggs are almost done, add shredded cheese and stir until it is incorporated into the eggs.
Assembly Instructions
Place about 1/4 cup each of the sausage mixture and the scrambled eggs into the center of one flour tortilla.
Fold the two sides of the tortilla toward the center and roll the tortilla up from the bottom.
Wrap the burrito in a paper towel section.
Wrap the paper towel covered burrito in foil and place inside a zipper top freezer bag.
Freeze for 3-4 weeks.
To Re-Heat:
Remove foil. Place paper towel wrapped burrito in a microwave oven for 1 minute and 30 seconds to 2 minutes. Unwrap and eat.
Note: If you are like me and you don’t love using microwaves, simply skip the paper towel and wrap the burritos in foil. The foil wrapped burritos can be placed in the oven and reheated at 350 degrees for 5 minutes or they can be placed in a toaster oven. Be sure to use an oven mitt as the foil will be very hot.

Oh, I forgot to mention you can add so many different types of meat, cheeses, and veggies to these breakfast burritos they are great!
This breakfast burrito has been a regular in my home for over 30 years, I choose not to freeze them, to me it taste better made like a taco. The only difference is that the veggies and/or potatoes, shredded cheese are already made and in my frig. (and the eggs are made to order).

Hi Luree – Our current favorite is Goodbye Gluten brand. For most recipes we use corn tortillas because my daughter likes them better.
If I’m going to reheat the burritos in the oven, do they need to be defrosted first? Or do you just pop them in straight out of the freezer?
They do a little better if you defrost them. You can put them in the fridge overnight then remove the wrapping and heat them at 350 degrees for 10 to 15 minutes. If you place them in the oven frozen they will take 30ish minutes to warm up depending on your oven.

Yes, I have seen the recipes with potatoes but they didn’t look appetizing to me. I hope you enjoy these!
