$125 Budget Weekly Menu – Making a weekly meal plan keeps me sane and helps me to save money and stay on budget.

BREAKFAST
Chocolate Chip Pancakes* (ingredients in pantry)
Cantaloupe slices, cheese toast
Cereal with milk x2
Cinnamon Raisin Bagel with cream cheese
Cottage Cheese with fresh blueberries and banana slices
Scrambled eggs, orange slices
LUNCH
Southwest Salad with sauteed chicken, black beans*, corn*, cherry tomatoes, avocado slices
Bean Burritos, green pepper slices
Apple Sandwiches, pretzels
Hummus, tortilla chips*
Peanut Butter Rice Cakes with banana slices and raisins* x2
Leftovers from Dinner
DINNER
Gluten Free Meatloaf, mashed potatoes, steamed broccoli
Spicy Chicken Thighs* (from the freezer – (sprinkle chicken skin with Lawry’s Seasoning Salt and bake at 350 degrees for 1 hour) ), steamed broccoli and cauliflower*
Pasta Alfredo with broccoli and sauteed chicken, salad* (some romaine lettuce left from last week)
Homemade Pizza with sausage and pepperoni
Turkey Pepper Jack Grilled Cheese* (cheese purchased last week, turkey from freezer), cucumber slices* ( 2 leftover from last week)
Steak and Peppers with Delicious Steak Marinade, rice*, steamed green beans
Taco Salad* (ground beef from freezer, corn chips from pantry), cantaloupe slices

My Target had day old rotisserie chickens on sale for 3.29!! I got there late so I only got 3. But that was enough for one dinner, 1 lunch meal of chicken salad, and 2 lunches of 1/2 chicken & salad for work. We’re also having a big pot of turkey chili.
That is awesome! I love finding deals like that.

Yesterday I bought 2 chickens at .99 lb. and 2 packages of pork chops, BOGO. They ended up being around $6.50 each, with 6 chops. I can get several meals from one chicken, roasted the first day, shredded the next day in chicken enchiladas, and boil whats left, the entire carcass, for dumplings or rice. We only eat pork chops occasionally. My mother is staying with us right now after a hospital stay. She needs to gain weight, so I am cooking anything she says she wants to eat. Meat is certainly high, but my husband is a big meat eater, so we always have it in some form.
We are carnivores as well, as you can plainly see. 🙂 Those are great prices!
