One of the most delightful inventions in the history of mankind is ice cream and it’s a staple in our house during the summer months. I created these simple and delectable Chocolate Peppermint Ice Cream Bars last week and they were a huge hit!
You Will Need:
8 chocolate cookies
2 cups vanilla ice cream
1 package York Peppermint Patty Minis®
Place vanilla ice cream into a square 8″ x 8″ or similar size glass baking dish and allow it to soften slightly. (I used an 11″ x 7″ dish in the photo.)
Cut York Peppermint Patty Minis® into small pieces.
Mix the peppermints into the ice cream. Spread the ice cream evenly in the glass baking dish so it is about an inch thick (if using a larger dish as I did the ice cream will not reach the edges of the dish).
Re-freeze the ice cream for 3 to 4 hours or until hardened. Use a cookie cutter or a drinking glass to cut circles from the ice cream.
Place each ice cream round on a chocolate cookie, top with a second cookie and serve immediately.
If you’ve given up on perfectionism and “Pinterest-y” looking projects you can simplify this recipe by purchasing ready-made cookies from the store, scooping softened ice cream onto a cookie and sticking the peppermint pieces into the sides like the photo above. You may need to refreeze the bars for an hour or so before serving if your ice cream is too soft.
This method doesn’t look as good but they were super fast to make and really the important thing to your kids is how the ice cream bars taste not how they look, right?
Chocolate Peppermint Ice Cream Bars
INGREDIENTS
8 chocolate cookies
2 cups vanilla ice cream
1 package York Peppermint Patty Minis®
INSTRUCTIONS
Place vanilla ice cream into an 8″x 8″ glass baking dish and allow it to soften for 3 – 4 minutes.
Cut York Peppermint Patty Minis® into small pieces.
Mix the peppermint patty pieces into the softened ice cream.
Spread the ice cream evenly in the glass baking dish until it is about one inch thick and re-freeze it for 3 to 4 hours or until hardened.
Use a cookie cutter or glass to cut rounds from the hardened ice cream.
Place each ice cream round on top of a chocolate cookie. Top with second cookie and serve immediately.
Makes four ice cream sandwiches.
