White Cheddar Chipotle Snack Mix 1 - The Peaceful Mompinit

I love spending relaxed time with my family and one of our favorite at-home activities is watching a movie together. Laughing (and sometimes crying) together while watching on-screen adventures brings us closer together and gives us lots of opportunities for later discussions about life issues.

What makes movie night even better is a special snack and this past week I came up with this tasty White Cheddar Chipotle Snack Mix. I had heard about chipotle but being a less-than-adventurous cook I never actually tried it before.

Oh Chipotle where have you been all my life?!

The smokey, spicy flavor is just amazing and once I made this snack mix we had a difficult time leaving it alone. Here’s the recipe if you would like to try this amazing-ness for yourself:

White Cheddar Chipotle Snack Mix

 

INGREDIENTS

1/4 cup (1/2 stick) butter

1 teaspoon garlic salt

1/2 teaspoon ground chipotle spice

1 cup Honey Nut Cheerios cereal

1 cup Frosted Cheerios cereal

2 cups pretzel twists

2 cups white cheddar popcorn

INSTRUCTIONS

Preheat oven to 250 degrees.

In a large bowl combine cereal and pretzels.

In a small saucepan heat and stir butter until melted.

Add spices to melted butter and stir.

Pour melted butter mixture over cereal and pretzels. Stir to coat well.

Spread cereal mixture evenly on a large cookie sheet.

Bake at 250 degrees for 20 minutes, stirring every 10 minutes. Oven temperatures vary so an additional 5 to 10 minutes may be necessary to brown the cereal mixture.

Cool cereal mix to room temperature and stir in popcorn.

Serve immediately or store in an airtight container for up to 2 weeks.

Makes approximately five one cup servings.
