Very Blueberry Smoothie, Cheese Toast (Udi’s gluten free bread)
Veggie Breakfast Scramble, orange slices
Gluten Free Bagel with cream cheese, fresh cantaloupe slices
Organic Yogurt with Crockpot Granola and fresh blueberries
Chex cereal with milk x2
Oatmeal (Bob’s Red Mill Gluten Free Whole Grain Steel Cut Oats) with raisins, Easy Baked Apples
LUNCH
Peach Mango Smoothie, popcorn
Tuna Salad, celery sticks
Ham and Cream Cheese Rollups, raw broccoli and carrots with ranch dressing
Easy Cheese Quesadillas (made with corn tortillas), green pepper slices
Rice Cakes with peanut butter and banana slices
Turkey and Swiss Lettuce Wrap, raw broccoli and carrots with ranch dressing
DINNER
Easy Chicken Stir-Fry (updated recipe & it’s soooooo good!), steamed broccoli, rice
Homemade Waffles with ice cream (we tried this last week & decided to do it again!)
Super Bowl Sunday: Queso Fundido with nacho chips, Chili & Cheese Chex Mix, hot dogs
Cheeseburger Pasta with gluten free pasta, Broccoli Slaw Salad
Mango Salsa Chicken, rice, steamed green beans
Grilled Cheese sandwiches, canned peaches (Udi’s gluten free bread)
Chocolate Chip Pancakes, bacon

I love mango salsa. I usually put it on fish or fish tacos, but the chicken idea sounds good, too!
I just cannot get my family to eat fish. 🙁
It’s been a slow process for us — to get the kids to eat fish. I started with battered and fried fish bites. Then, I grilled tilapia fillets with a little Mexican seasoning for fish tacos. They loved the tacos! Now they will tolerate some other baked fish meals, too. But they aren’t big fans of fish, so I can’t make it too often or they start to complain.
I will have to try the slow approach. Do you have a gf recipe for the battered fish?
