I think my favorite fruit is blueberries. When blueberry season arrives, I buy pounds of those beautiful purple berries, and in the winter there is nothing quite like a warm blueberry muffin to start your day off right.
This Gluten Free Blueberry Muffin Recipe is the best that my daughter has created yet. The addition of just the right touch of pure maple syrup creates a sweet, moist and delicious texture that you will love. Try it and let us know what you think!
INGREDIENTS
1 and 1/4 cup gluten free baking mix (we use Pamela’s Ultimate Baking and Pancake Mix, 4-Pound Bag)
1/4 cup white granulated sugar
1 large egg, beaten
1/4 cup water
1 teaspoon pure vanilla extract
1/8 cup pure maple syrup
1/2 cup frozen or fresh blueberries (we used frozen)
INSTRUCTIONS
Combine baking mix and sugar in a large bowl and set aside.
In a separate bowl, combine egg, water, vanilla and maple syrup. Mix well.
Add wet ingredients to dry ingredients and stir until just combined.
Fold in blueberries.
Spoon muffin mix into greased muffin tins, filling each cup 2/3 full.
Bake at 350 degrees for 18-20 minutes.

Absolutely Amy – we freeze them all the time. You can reheat them in the toaster oven, oven or microwave.
Ok. I have issue with this recipe (friendly tone). Real maple syrup and gluten free baking mixes are expensive. My grocery budget is already more than I would like it to be and those things wouldn’t fit in it. I’m more than a little confused as to how so many other moms can feed their families like this by spending so much less than I do. :'(

Hi Brenda – I hear your frustration. The reason I post gluten free recipes is that my 17 year old daughter is gluten free for medical reasons. We try to serve naturally gluten free dinners (meat and vegetables) and my daughter makes one or two exclusively gluten free treats each week that are just for her. The baking mix that we mention in the recipe is expensive but because my daughter is the only one using it that 4 pound bag lasts a LONG time. 🙂 We get the maple syrup from Aldi’s (a discount grocery store chain) for $3.74 for 8.5 ounces, which is relatively expensive, but again we are not using it for anything other than special recipes.
