Swirl
Swirl the olive oil in your glass to release the oils esters (the molecules which contain the aroma).
Sniff
Inhale the aroma of the oil. The aroma exudes (comes from–better word here) the fruitiness of the oil and can be subtle or intense.
Slurp
Sip the oil while taking in a little bit of air. This helps to emulsify the oil and spread it throughout your mouth. The taste can fruity or peppery, smooth or harsh.
Swallow
Once you swallow take note of any peppery or stinging sensation in your throat. There should be no after taste from a high quality olive oil.
We recently held a tasting of our own and really enjoyed the flavor of the Carapelli oil. Our favorite way to use olive oil is to mix fresh grated parmesan and dried basil with it and dip fresh French bread into it.
