Our family loves extra virgin olive oil and we use it in everything from home made salad dressings to cooking stir fry vegetables. I recently had the opportunity to try a brand that is new to us: Carapelli.
Located just outside the Italian city of Florence, Carapelli Olive Oil Company has been producing olive oil since 1893. The company has a quality certification program that meets and exceeds the strict quality specifications required in Europe and the United States. They also package the oil in dark colored glass bottles to maintain the flavor and quality.
Did you know that there is a process to olive oil tasting just like wine tasting? There are four steps:
Swirl the olive oil in your glass to release the oils esters (the molecules which contain the aroma).
Inhale the aroma of the oil. The aroma exudes (comes from–better word here) the fruitiness of the oil and can be subtle or intense.
Sip the oil while taking in a little bit of air. This helps to emulsify the oil and spread it throughout your mouth. The taste can fruity or peppery, smooth or harsh.
Once you swallow take note of any peppery or stinging sensation in your throat. There should be no after taste from a high quality olive oil.
We recently held a tasting of our own and really enjoyed the flavor of the Carapelli oil. Our favorite way to use olive oil is to mix fresh grated parmesan and dried basil with it and dip fresh French bread into it.
