We like to do “Meal-in-one Potatoes” from the Once a Month cooking cookbook. It’s very inexpensive to make – even doubled, for a large family- and very filling!
That sounds good. Can you share the details?
Great ideas!! But I have to say that if I set a stuffed baked potatoe in front of my DH for dinner he would wonder where the rest of his meal was. LOL – Same with the fruit smoothie and popcorn for lunch. While it is all very well balanced, my meat and potatoes husband would freak.
Good point Jody. As far as the lunch items, my husband is provided lunch at work so the smoothie and popcorn is just for my children and me.
Of course, as I mentioned in my e-book, you need to do what works for your family. My husband is on board with the idea that we are saving money on meals so that we can save for other things that are more important to our family. You may have different priorities.
If you do serve baked potatoes, you can add a salad as we do sometimes or add more toppings like taco meat or barbecue chicken to make it more filling. You will still be saving money because you will probably use less meat as a topping than you would serving it as an entree. By the way, when we have baked potatoes my husband eats two large ones with lots of bacon, broccoli and cheese! 🙂
