Simple Tomato Cucumber Salad (GF)
- 2 large ripe tomatoes, large dice
- 1 cucumber, large dice
- 1/2 green onion, diced
- 1/2 cup light olive oil
- 1/4 cup red wine vinegar
- salt to taste
- Combine all ingredients in a glass bowl.
- Refrigerate for 1-2 hours to allow flavors to blend.
