Cheeseburger Casserole Recipe

Ingredients
- 1 16 oz pkg uncooked rotini
- 2 tablespoons olive oil
- 1 pound ground beef or ground turkey
- 1 cup chopped onion
- 1 tablespoon Italian spices
- 1 clove garlic, minced
- 1/2 teaspoon salt
- 1 can (14.5 ounces) diced tomatoes with juice
- 1 large can (15 ounces) tomato sauce
- 1 1/2 - 2 cups shredded Cheddar or Monterey Jack cheese (we like ours cheesier)
Instructions
- Preheat oven to 350ยฐ.
- Lightly spray an 11x7-inch baking dish.
- Cook pasta according to package directions until just tender; drain well.
- In a large skillet over medium heat, saute onion until almost translucent.
- Add ground beef and brown until almost cooked through.
- Add Italian spices, salt and garlic and cook 2 to 3 minutes longer.
- Stir in the tomatoes, tomato sauce and the cooked drained pasta.
- Mix well.
- Spoon ground beef pasta mixture into the prepared baking dish and sprinkle with cheese.
- Bake for about 30 minutes or until casserole is hot and bubbly and the cheese is beginning to brown.
*I use pre-cooked ground beef from the freezer (see here).

Thank you for this recipe and the many others you have so graciously shared on your website. This was delicious! Very different from baked pasta casserole recipes I’ve tried. I cook for just me and so, I keep out just two servings and freeze the others to enjoy later – one for now and one for two days from now. It freezes wonderfully. A veg., and a salad with this make a great dinner (which reheats well in a microwave). God’s blessings for you and your family.

This looks delicious. Would you have the # of servings this recipe makes? I like to cook once, freeze and nuke future meals with only needing a salad, veg., roll and fruit dessert. TYVM
Yes, Wendy. This should easily serve 6, and possibly 8 depending on your serving size. Great idea to cook and freeze.

Would this work if I made it the day before we planned to eat it or would it be a mushy mess?
We have eaten it the second day. I would undercook your noodles just a little so they are firmer and drain the tomatoes before you add them.
I’m totally using this for my next batch of freezer cooking. I always use egg noodles for my pasta though when freezing. Holds up SO GOOD and always cheap ๐
