Simple Gluten Free: A very simple salad that goes great with burgers, fish or chicken.
12-16 oz bag broccoli slaw
1 pint grape tomatoes halved or 3 Roma tomatoes cut into chunks
1 cucumber peeled, cut into chunks
1/2 cup red wine vinegar
1/2 cup extra virgin olive oil
salt to taste
Combine all ingredients in a glass bowl (vinegar can combine with plastic to affect the taste of the salad). You can also add 1/2 chopped red or yellow onion if you like.
Refrigerate for 2-4 hours before serving.
