2 cups shredded chicken
2 stalks celery chopped
1/2 medium onion chopped (may use a whole onion)
1/2 cup pecans chopped
1 small Granny Smith apple chopped (optional)
1/2-1 cup mayo
salt and pepper to taste
Combine all ingredients. For each serving, spread about 1/2 cup of chicken salad on 1 slice of whole wheat toast. Top with a slice of swiss cheese and melt in the toaster oven or conventional oven. Serves 4-6.
