I just found out a few months ago that my oldest daughter is allergic to wheat. As I researched alternative foods I have found many expensive items and many difficult recipes.
My long term strategy is to feed my family natural whole foods like meat and vegetables and occasionally buy specialty items for the allergic child. I was recently very excited to find a reasonable alternative:
Chebe Bread
Chebe Bread is a gluten free, flour-like mix made from manioc, which is a root vegetable from South America. The mix is available in some grocery stores and on Amazon.com by the case. It makes a very good thin crust pizza.
Here’s the recipe:
BRENDA’S AWESOME CHEBE BREAD PIZZA
Mix together in a large bowl:
1 pkg All Purpose Chebe Mix (NOT the pizza crust)
1 tsp salt
1/2 tsp garlic salt
1 tsp dried basil
grated cheese to taste (I use about 1/2 cup)
In a separate bowl, mix:
2 eggs beaten
2 Tbs olive oil
Add to the dry mix and combine. Add 5 tablespoons of water while continuing to mix. Remove from the bowl and knead for a minimum of 5 minutes. Roll the dough out onto a cookie sheet. Prick both sides and brush with olive oil. Bake at 375 degrees for 10 minutes on each side. Put pizza toppings on and put under the broiler for 1 minute or until cheese has melted. YUM!
