Simple Gluten Free: Veggie Breakfast Scramble

A sunny recipe from The Peaceful Mom!

Ingredients

  • 1/8 cup fresh broccoli slaw
  • 2 tablespoons butter
  • 2 tablespoons diced onion
  • 2 large eggs
  • Shredded cheddar cheese (optional)
  • Salt to taste

Instructions

  1. Melt butter in saute pan.
  2. Add broccoli slaw and saute for two minutes.
  3. Add diced onion and saute until onions are just translucent.
  4. Add eggs and stir to combine all ingredients.
  5. Stir and cook until eggs are almost done.
  6. Add cheese (if using) and continue cooking until well done.
  7. Salt to taste.
  8. Serve immediately with fresh fruit (orange slices are especially good!)
