Cheeseburger Casserole Recipe

Cheeseburger Casserole Recipe

A tasty recipe from The Peaceful Mom!

Ingredients

  • 1 12-16 oz pkg uncooked rotini
  • 2 tablespoons olive oil
  • 1 pound ground beef or ground turkey
  • 1 cup chopped onion
  • 1 tablespoon Italian spices
  • 1 clove garlic, minced
  • 1/2 teaspoon salt
  • 1 can (14.5 ounces) diced tomatoes with juice
  • 1 large can (15 ounces) tomato sauce
  • 1 to 1 1/2 cups shredded Cheddar or Monterey Jack cheese

Instructions

  1. Preheat oven to 350°.
  2. Lightly spray an 11x7-inch baking dish.
  3. Cook pasta according to package directions until just tender; drain well.
  4. In a large skillet over medium heat, saute onion until almost translucent.
  5. Add ground beef and brown until almost cooked through.
  6. Add Italian spices, salt and garlic and cook 2 to 3 minutes longer.
  7. Stir in the tomatoes, tomato sauce and the cooked drained pasta.
  8. Mix well.
  9. Spoon ground beef pasta mixture into the prepared baking dish and sprinkle with cheese.
  10. Bake for about 30 minutes or until casserole is hot and bubbly and the cheese is beginning to brown.

Would this work if I made it the day before we planned to eat it or would it be a mushy mess?

We have eaten it the second day. I would undercook your noodles just a little so they are firmer and drain the tomatoes before you add them.

I’m totally using this for my next batch of freezer cooking. I always use egg noodles for my pasta though when freezing. Holds up SO GOOD and always cheap ;)

I just made this for my hubby and he raved at how good it was! I was so hungry I just ended up eating it once the meat and rotini were done, and sprinkled cheese on top. :) Hubby told me to bookmark this to his favorite menu’s! Thanks!
