Serving Size: Serves 2 as a main course, 4 as an appetizer.

Parmesan Chicken Strips (GF)

A simple and tasty recipe from The Peaceful Mom!

Ingredients

  • 2 skinless, boneless chicken breasts
  • (or equivalent amount of chicken breast tenders)
  • 1/2 cup fresh grated Parmesan
  • 1 teaspoon pepper
  • 1/2 teaspoon Lawry's seasoning salt
  • 1 teaspoon Italian seasoning
  • 1 egg, beaten
  • 1/8 cup (1/4 stick) butter
  • 1/8 cup olive oil

Instructions

  1. Combine the cheese, pepper, salt and Italian seasoning.
  2. If using chicken breasts, slice them into long strips.
  3. Dip chicken into the egg, then dredge in the cheese mixture. Use more cheese as needed.
  4. Heat butter and oil over medium-high heat being careful not to let the butter burn.
  5. Saute chicken strips for about 4 minutes per side or until cooked through.
  6. Serve immediately.
